Ingredients:
3 Ripe Mangoes, de-stoned and cubed
3/4 cup water
1 cup simple syrup
Juice of half a lemon
Instructions:
In a blender, purée the mangoes with 3/4 cup of water until smooth.
Strain the mixture to remove fibrous pulp.
Add 1 cup of simple syrup (equal parts sugar and water boiled and then cooled) and lemon juice.
Egg test: Clean an egg thoroughly and place in the mixture. If it floats and a quarter-sized portion of the egg is visible on the surface, enough simple syrup has been added. If the egg does not float, add more simple syrup until it does. Remove the egg.
Pour the mixture into an ice cream maker and set for 25 minutes.
Place in freezer overnight and enjoy!
