Fennel and Sausage Pasta

In an attempt to use some fennel I had in my refrigerator before it expired, I developed this recipe to create a hearty comfort meal. I highly recommend this simple, yet tasty pasta dish. It has already become a regular in my repertoire.


Yield: 4 servings


Ingredients:

3 tablespoons extra virgin olive oil

1 medium onion, halved and thinly sliced

1 fennel bulb, halved and thinly sliced (Reserve ferns)

2 Trader Joe's spicy chicken sausage links

pinch of salt

1 lb pasta (I used Trader Joe's Rotini)

Ample grated Parmigiano Reggiano


Instructions:

1. In a large pan, cook the fennel and onion in the olive oil until translucent.

2. Slice the sausage links at an angle into 1/2 inch slices and add them to the pan. Cook until golden brown and season with salt to taste.

3. Prepare the pasta as described on the package. Once cooked, add to the pan and combine.

4. Top with the grated cheese and garnish with the reserved fennel ferns.
