
Ingredients:
4 chicken thighs, bone-in
3 sweet potatoes, diced
3 small onions, diced
3 apples, diced
500 g hen of the woods, divided into florets
olive oil to taste
Dressing:
3 tablespoons olive oil
3 tablespoons honey
1 tablespoon fresh ginger, minced
1 tablespoon garlic, minced
1/4 cup water
1 teaspoon salt
Instructions:
Preheat the oven to 425 degrees Fahrenheit.
In a small sauce pan, combine the ingredients for the dressing and whisk. Simmer for 10 minutes and set aside.
Add some olive oil to the base of a 9 x 13 baking tray. Add the rest of the ingredients into the baking tray and top with the dressing. Toss to cover thoroughly.
Bake for 30 minutes. Cover with aluminum foil and bake for another 25 minutes. Uncover and broil for the last 5 minutes.
Serve over the roasted vegetables and apples and enjoy!
