This is a quick recipe I threw together one evening after work. You can find all of these ingredients at Trader Joe's. For an extra bonus, toss it in the oven for a few minutes to melt the fresh mozzarella.
Ingredients:
1 lb Rotini Pasta
1 jar sun-dried tomatoes
1 jar marinated artichokes
1 can pitted green olives
1 ball of fresh mozzarella
1 jar of Genovese pesto sauce
Instructions:
1. Cook the pasta according to package instructions.
2. Strain the pasta and place in a large bowl.
3. Drain the artichokes and olives. Dice the mozzarella. Add all ingredients to the pasta, including the sun-dried tomatoes and half of the sun-dried tomato olive oil. Add the pesto sauce and mix to combine.
4. Serve warm.
