Sweetfern Shortbread Cookies

Ingredients:

1 cup All-purpose flour

pinch of salt

1 tablespoon powdered sweetfern (dry the sweetfern and blitz into a powder in a food processor)

1/3 cup confectioners' sugar

1/2 teaspoon vanilla

1/2 cup butter (1 stick), room temperature


Instructions:

  1. In a food processor, mix the flour, salt, and sweetfern.

  2. Add in the sugar, vanilla, and butter and mix.

  3. Roll the dough into a log about 2 inches in diameter.

  4. Wrap the log tightly in plastic wrap twisting each end tightly. Refrigerate for two hours.

  5. Preheat the oven to 375 degrees Fahrenheit.

  6. Slice the log into 1/3 inch discs. Bake for 12-13 minutes, until the edges turn slightly golden brown.

  7. Allow to cool for 5 minutes on the baking sheet and then transfer to a cooling rack.

  8. Cool to room temperature and enjoy!
